Ideas for Nueske Bacon
If you got Nueske bacon this week, you can, of course, slice it and fry it and enjoy the thickest, smokiest bacon. Perhaps put it in a winning BLT. But one of the reasons I love to get slab bacon is to cut it into lardons and add it to salads or a vegetable hash. I often combine cauliflower, brussel sprouts and potatoes in a hash with the Neuskes and enjoy it with a runny fried egg, maybe with a splash of vinegar added to the hot pan as I take out the egg. And if there’s a fatty end that you don’t want to eat, render it in a pan and then use it to cook your beet greens or rapini. Or add a fatty end piece to a pot of beans for added richness and smokey flavor.
