The RAMEN KIT is back.
The forecast says it’s going to get grey in LA, so let’s have ramen while it rains. Such a winning combo.
Rui is making tonkatsu ramen broth, a rich pork bone broth with ginger and scallions, and Mel is making fresh ramen noodles. Add a slice of 24 hour sous-vide pork belly rich with sake, ginger, and soy. Or dice the belly, render it crispy and make pork fried rice for breakfast, lunch, or dinner. If you like an egg in your ramen, get some tare, a soy-based seasoning sauce that can be added to ramen as a flavor booster, or used to marinate peeled soft boiled eggs. The farm box will have scallions and Bloomsdale spinach for your ramen as well. As we wait for Peter Schaner’s hens to lay more eggs, the boxes will have more produce and offer eggs only as an add on.
We also have fresh, raw Ora King salmon by the pound, whole organic Mary’s chickens, and Meiji tofu. Meiji tofu is a family-owned and operated Japanese style tofu shop in Gardena. Their artisanal tofu is handmade in small batches with non-GMO soybeans. We are offering their supreme tofu, which is silken and pudding like, and their firm block tofu.
There’s a miso glaze for you to dress your salmon, chicken, or tofu. And a carrot ginger salad dressing for your lettuces or green cabbage. We are also getting bulk bags of Koshihikari rice to portion. This short-grain rice is the rice of choice for most sushi chefs, but it also works well for rice pudding, risotto, and such.
Jared’s frozen chewy ginger cookies can complement your Japanese inspired meal or improve any grey day. He was also inspired to make creamsicle parfaits with market citrus for a taste of sunshine. Which reminds me, Schaner’s fresh-squeezed grapefruit juice is back among our juice options.
